I believe they are in the process of accreditation now. How much does accreditation matter if the curriculum, teachers, and educational philosophy are great?

I can imagine this could be quite a hassle if you're planning on going to graduate school after earning your undergraduate degree from George Wythe. You would have to contact all of your graduate school candidates before starting your undergraduate studies. If by some chance you fail to get accepted at those graduate schools who would accept George Wythe's credits, then you'd really be in a bind to find another grad school that would take them. Only now you can't opt out of George Wythe for undergraduate studies if you can't find another grad school, because you already have the degree.
I had this same problem with Yorktown University. I tried to get my employer to pay for a managerial economics degree from there, and they absolutely would not do it because it wasn't accredited.
I guess it all depends on the plans of the individual student how important George Wythe's lack of accreditation will be...
